Beef tounge is great just sliced and eat on or cracked or on a sandwich with onion and cheese. It is best pickled in vinegar with onions, salt and pepper. Not sure why its wasted to eat in tacos bit whatever. Great Pennsylvania food!

Beef Tongue
Rumba beef tongue and beef cheek are my go to meets when I make Barbacoa. I used to buy my meats from a Mexican meat market, but after finding Rumba at the grocery store, I only use Rumba meat products.

More tender than filet mignon!
I was raised on beef tongue - ir was always a very cheap cut of meat. UNTIL with the advent of "Taco Trucks". Stores became aware of it's popularity, around 1990. Then the price went way up. Now we only afford it on special occasions!
My mom was from North Dakota. She spent 2 years as a young woman voluntarily as a nurses aid in Mexico. Maybe she learned about it there, I don't know. She just boiled it. She served it sliced, hot or cold, always with mustard. Sooo good!

Quality meat
My family has enjoyed Rumba Meats for many years. We can always count on excellent quality in all their products. We especially like tongue and cheek meat- yummy barbacoa tacos!!
