Beef Liver
Beef liver cooks up quickly on the skillet or grill. It is tender and flavorful, often used in pan-fried liver and onions (higado encebollado). You can also use beef liver in any dish you’d typically use ground beef, such as meatloaf, chili or stew. Cut liver into strips, then soak in milk for a couple hours prior to cooking.
