Arepa y Bowl Cheekmeat

Ingredients

  • Rumba Meats® Beef Cheek Meat (1 pound)
  • 1 Onion
  • 1 Bell Pepper
  • ½ stalk leek
  • 3 stalks spring onion
  • 1 stalk celery
  • 2 tbsp cilantro
  • 1 tsp cumin
  • 2 tbsp parsley
  • 5 cloves of garlic
  • 3 leaves culantro
  • salt
  • black pepper
  • 2 tbsp olive oil
  • 1 bay leaf
  • 1 cup beef broth (from cooking the meat)
  • 1 tomato

Instructions

  1. Cook the meat in water until tender, 1–4 hours
  2. Cut into strips or cubes
  3. Chop all vegetables and herbs
  4. Cook the meat in olive oil and when brown, add all vegetables and herbs
  5. Add the broth
  6. Serve it as a filling in a corn arepa or in a bowl with rice, spinach and avocado
